Salads
Greek Salad
4oz Olive oil
1oz Lemon juice
1oz Red wine vinegar
3tbsp Fresh oregano chopped
2 English cucmbers
12oz Feta cheese
1lb Red and Green peppers diced
1lb Olives
3 Tomatoes cut into wedges
1oz Fresh parsley chopped
8oz Red onion, sliced in strips
Black pepper TT
1 Head romaine lettuce
Steps
1. To make the dressing, whisk together the olive oil, lemon juice, vinegar and oregano.
2. Dice the cucmuber. If using field cucmber, peel and slice in half lengthwise. Remove seeds and cut into dice.
3. Dice or crumble the feta cheese into small pieces.
4. Dice Peppers into 1/2 inch pieces.
5. Combine the olives, cucmbers, tomatoes, chopped parsley and red onion in a bowl and add the dressing. Toss to combine
and season to taste with pepper.
6. Line plates or platter with the romaine lettuce leaves. Add the salad mixture and sprinkle on the feta cheese. Garnish
as desired.
Garden Salad
4oz Vegetable oil
1oz Vinegar
1oz Sugar
Salt and pepper TT
1lb Red and Green peppers diced
3 Tomato cut into wedges
1 English cucmber diced
Celery stocks cut into strips or diced
1 Head of romaine lettuce
Red Radish (optional)
Steps
1. To make dressing. Mix together oil, vinegar, sugar, salt and pepper in dressing bottle and shake very well.
2. Dice peppers into 1/2 inch pieces.
3. Dice cucmber into bite size pieces
4. Cut tomatoes into wedges.
5. Break off a couple pieces of celery and cut off the ends and tips. Then cut into half and you could either just cut
them into 1/2 inch strips or dice.
6. Wash and cut your lettuce into bite size pieces.
7. Either combine salad mixture in large bowl and let guest serve or put on salad plate starting with lettuce, tomato wedges
around the edge, peppere and cucmber and celery in the middle. Then sprinkle dressing onto each plate or let guest do it themselives.
You could also add red radish if you like.
Chef Salad
1 head of romaine lettuce
8oz Cheddar cheese shreeded
4oz Chicken or turkey breast diced
4oz Ham diced
Tomato cut into wedges
8oz Ranche Dressing or your own.
Steps
1. Wash and disgard any bad or dirty leafs of lettuce. Then Cut the washed leaves of lettuce into bite size pieces and
place it on salad plate(s)
2. Then add your tomato wedges around the plate.
3. Take your cooked chicken or turkey breast and dice it up along with your cooked ham. Arrange on top of your lettuce
starting with your ham and them chicken or turkey.
4. Add your shreeded cheese on top of your ham and chicken or turkey mixture.
5. Spread dressing over the top of salad.
Baby Spinach Salad with Tomato and Mozzerella
5oz Baby Spinach leaves
1 beefsteak tomato, cut thinly crosswise
1/2 cup Fresh Basil leaves, cut into thin strips
1/4lb part skim Mozzerella diced
2tsp fresh oregano, chopped fine
2tbsp Olive oil
2tbsp Balsamic vinegar
kosher salt and ground pepper TT
Step
Alernate layers of spinach and tomato across plate. Top with basil, mozzella and oregango. Dress with oil and vinegar.
Season to taste with salt and pepper. Serve
