I like to share you some recipes that I have tried
and done.
Meat rub and sauce:
1 cup of sugar 1/2 cup brown sugar 1Tbps of dry mustard salt and peper
to tasate 1 Tbps of chilli powerd 1 Tbps of paprika 1 Tbps of onion and garlic powder 1 tsp cyanne 1 can of
tomato paste 1/2 cup vingar (cider) 1 cup ketchup couple dashes of hot sauce (If you like too)
Steps:
1.
In a bowl. Take all your dry ingredients and mix together. Just for the rub just add tomato paste.
2. Take some of
your rub that you made. Rub it on your meat that you are going to cook. Myself use it on steak But you could use it on
any kind of meat you are going to B-Bque. You must apply to both sides of the meat.
3. For the sauce. Take rest of
your ingredients and add it to your rub. When you have sauce made. You could apply it to the meat while it is cooking on the
grill. You could also use this put on your meat after it is cooked. If you put on meat after it cooked. It just makes it as
good glaze on the meat. If you are cooking steak Cook too your likeness.
Rib Dry Rub and Sauce:
1 Cup of
sugar 1/2 Cup of brown sugar. 1 Tbsp dry mustard 1 Tbsp chilli powder 1 Tbsp paprika 1 tsp cyanne 1 Tbsp
garlic and onion powder salt and peper to tasate 1 Tbsp of Cajun seasoning 1 Cup ketchup 1/2 Cup vingar(cider) 1/4
Cup Molasses Couple dashes hot sauce(optional)
Steps:
1. In bowl take all your dry ingredients and mix them
together. 2. Start rubbing your meat or ribs with some of thes ingerdients. Do both sides once or twice if you like. 3.
Take remander along with any wastage and put back into the bowl. Then add ketchup, vingar, molasses and hot sauce. 4. Cook
your meat or ribs with rub on high heat on the grill close to 10 -20 minutes. Take some vingar and put in bottle and spray
to keep it most on both sides every minute. 5. By this time turn down your heat down to midum low heat. While on midumlow
heat. Base your meat or ribs with your sauce. It is alright if you have a little blackeness. Cook time in should be close
to hour. Besure not to dry out your meat while cook it.
If you are cooking chicken or Turkey and want something different
too it. Take a lemon and orange. Cut both in have lenthwise. Squize and rub all over. Then take midum onion and cut into hafe
and then cut four pieces and stuff into the cavity. Then take two cloves of garlic and take the peal off it and cut off ends
and place that into the cavity. Take at least one apple and cut into pieces and place into the cavity. Then put into a preheated
oven at 400/450 and then turn it down to 350/325 for 25 minutes perlbs. If you use rotisserie make sure you tie off the lags
wings and close up cavity.
